Taco Meal Prep Bowls

This healthy take on Mexican food combines all the best ingredients and makes a delicious meal prep bowl.

INGREDIENTS:

  • 1 cup brown rice

  • 2 tablespoons olive oil

  • 900gms beef mince*

  • 2 x 40g package taco seasoning

  • 425g can black beans, drained and rinsed

  • 450g can whole corn kernels, drained

  • 3 Roma tomatoes, diced

METHOD:

  1. In a large saucepan of 2 cups water, cook rice according to package instructions; set aside.

  2. Heat olive oil in a large stockpot or Dutch oven over medium high heat.

  3. Add ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning.

  4. Drain excess fat.

  5. Divide rice into meal prep containers. Top with beef mince mixture, black beans, corn and tomatoes.

NOTES:*Turkey mince can be substituted
